Cinnamon Apple Paleo Pancakes




Happy Tuesday everyone!! 

I have another recipe post in store for you. I was going to do chicken nuggets this week, but forgot to buy stuff for them...like the chicken. Oops!! So instead this week will be pancakes! Yay!!


 Before I get started on that, I want to take a second and promote/announce Moms Gone Strong, my new joint project that I am super excited over, and think you should be as well!!! Pancakes!!!!!


Cinnamon apple Paleo pancakes to be exact.

This recipe is really easy to make. It takes a total of 4 ingredients to make (5 if you want a little extra sweetness, we'll discuss that later on) and takes less time to make than traditional pancakes, especially anything homemade. I think I may even like them better because they aren't dry like traditional pancakes can be if you don't smother them in syrup. They are moist, fluffy and delicious! Even though they are made using a banana, it's not overwhelmingly banana tasting either.

I stole the idea from my friend (and now partner in crime! Yay!). She posted a basic recipe with blueberries on top, but when I decided to make it I wanted something more winter tasting to me. So I adapted it to be cinnamon apple style pancakes.

Ingredients 




For these pancakes you will need four ingredients:

 Two eggs 
 One banana
 Two tsp cinammon-divided
 One apple, chopped



Let's Cook! 

In a bowl, mash up the banana 

Add the eggs

Whisk together, mashing up any banana chunks until smooth. Add one teaspoon of  cinnamon. I used more, but it's a matter of taste. I really like cinnamon!!



Pour your batter into a large skillet. It will be runny so you might want to use a spatula to direct the shape and size of your pancakes. I was surprised by how much this recipe makes!!



In a separate pan, cook your chopped apple with the second teaspoon of cinnamon. You want them to be soft and gooey, which I some how managed to not take a picture of ! 

When your pancakes are golden brown on each side (or black if you get distracted by fighting kids half way through the cooking process) dump them on a plate and top with apples!

 If you have a sweet tooth, or if you want to give your children a special treat drizzle with a bit of honey as well. I do give my kids a honey drizzle on theirs, but personally find the apples to be more than enough as a topping. Some people believe that honey should be included in a Paleo diet, I'm trying to not include honey currently. After all, sugar is sugar no matter what you call it!

There you go, the easiest pancakes you will ever make!

Even if you aren't on a Paleo diet these pancakes are at least worth trying, especially if you are trying to live a healthier lifestyle or lose weight. Why?

For this sized serving of Paleo style pancakes you will consume 302 calories, 13 grams of protein, 33 grams of carbohydrates, 14.5 grams of fat and 15 grams of sugar.

For the apple topping you are getting 115 calories, 31 grams of carbohydrates and 23 grams of sugar.

For an equal serving of traditional pancakes you would get 420 calories, 11 grams of protein, 80 grams of carbs and 5 grams of fat.

For the same amount of regular syrup to top you'd be consuming 780 calories, 193 grams of carbs and 119 grams of sugar.

And that's also added sugar vs natural sugar and carbs containing nutrients and fiber vs empty simple carbs. There's no argument that the Paleo style pancakes are the better choice for your health. It's balanced nutritionally and not ridiculously sugar filled and caloric.
